Kielbasa Potato Bake

Here's a fantastic recipe my sister-in-law shared with me a few years ago. 
It's super easy - just mix together 5 ingredients:
Milk
Mushroom Soup
Chopped Garlic
Potatoes
Kielbasa
Bake and serve!
This is the dish my 6-year-old always requests for dinner, and it's sure to please Mr. Meat-And-Potatoes Allen as well.  Usually I'll use skim milk, low-fat soup, and lower fat turkey smoked sausage instead of traditional kielbasa for a healthier version.

The only downside is that there's rarely enough leftover to make another meal out of it the next day.

Saffron Rice & Corn Side Dish

In the words of my 4-year-old daughter...  "I LOVE this yellow stuff!"
Isn't that music to a mother's ears?  :-)
I love this recipe because it's super quick and made with just a few ingredients that I usually have on hand - Cream of Chicken Soup, Canned Corn & Shredded Cheddar Cheese.  Just add some Vigo Saffron Rice....and Voila!  A yummy yellow dish that goes great with all sorts of things - we just had it with BBQ meatloaf and together they were fantastic!

Chicken Broccoli Burritos

This is a simple, yet tasty take on burritos. Perfect for a quick weekday meal.
I love this recipe because it's so easy to put together with just a few ingredients and it's much healthier than my favorite burrito at our local TexMex joint! If you can find Wegmans' Sante Fe salsa, I highly recommend using that - delicious! It's also simple to adapt if you want a vegetarian version - skip the chicken and add more broccoli.

My local Wegmans sells butternut squash already prepped into chunks, so this is a quick, easy meal to pull together.

Bon Bon Cookies

The focus of our Christmas cookie trays each year are our Bon Bon Cookies. They're a light lemony flavor that are wonderful with coffee after a holiday meal. They also make elegant desserts for a bridal shower or wedding when topped with silvery sprinkles.
This recipe makes a lot - over 200 cookies - but it's easy to adjust down into smaller batches.
